Title: Specific Question about GPG/PGP

Okay, I've tried reading the 364 page thread about the secure mail, but none seems to address my question specifically.

So, I have a Mac OSX 10.7.5 I downloaded from https://gpgtools.org. I set up a fake email, and put in an encrypted key. I managed to muddle through their video, which showed how to encrypt something. http://www.youtube.com/watch?v=Rt4MFkbr6co&feature=player_embedded

I twice sent my address to two vendors, and got both packages! But then I didn't do it for a week and forgot how. :(

This is what I'm confused about watching the video:

there's a part with the signature at 1:52 in the video. In the video, they use text edit, and write the words"signed message" high light it, then press OpenPGP:sign. They sign it with their signature. Then highlight it, it goes away, then they write "encrypted message" then highlight that, encrypt that, then sign it with the box that pops up. And that's the message.

This is the bit that I'm confused about. what is it that I'm supposed to be doing there? Since this is an example, I don't know what this is trying to show me to do. am I supposed to use my signature? What is the "signed message" bit?
I really have no idea what that part is about.
