Can my plain text passwords and login details be sniffed via my Tor exit node?

Tor answers this question:

Is it easy to do on Tor?

It as easy as setting up a Tor exit node and running a packet sniffer on your local network connection.

How does one protect against this? I know it said how to on that site but can someone explain it again for those who have a hard time understanding please?

Exit node is able to read any unencrypted traffic.
