I've made it through three interviews and was selected for a very good job. They are now asking for copies of my bachelors degree and unofficial transcripts. I sort of fudged that detail. The truth is that I stopped one semester short due to some personal issues and I never actually finished. I listed that I did. Anybody with experience or that knows of something, you'd be a lifesaver. I don't want to take any risks on shoddy fakes from random websites. \

I can't help you out but you should clarify what kind of copies your potential employers are looking for. Do you need one with an engraved seal, embossing, other "official" type stuff, or will a "photocopy" of a degree and transcript be enough?
Anybody with decent photoshop skills could make what looks like a photocopies because of their relatively poor quality and lack of security features. You know how cheques and some currencies have colourful holograms that show up as black when scanned or photocopied? Well it's a lot easier to put black on a digital copy of an image than a hologram in real life.
So yeah, you should clarify what you're looking for.

Eventually, the hiring company will request the official transcript, which must come directly from the university. Check the administrative office's website, you'll see a section on how to have it sent (along with what they charge for it).
My point is that you can only forge it for so long.

Seems to me the money and effort spent on getting forgeries could be spent on finishing that last semester of school.

I thought about this some more, and I realize I left a fairly crappy answer for you. Let me try again.
There's nothing you can do to forge it; you will get caught. However, you could ask them to hold the offer for you. Up to 6 months is not an unusual request, depending on the size of the company (bigger companies would do it, smaller not so much). If they let you do the 6 months, use that time to finish your degree, whether it be at your old place or a new one.
Good luck.
