It seems to me that there is no downside to selling on SR versus real life. It seems safer, more anonymous, less legwork, etc.
Can anyone tell me any downsides they've experienced with selling on here, and how one might avoid them or reduce risk of experiencing them?

It is definitely safer and more anonymous but there is much more work involved.

Yeah there is a lot more legwork. And in some ways, there is more risk because you rely on a third party to deliver your product. Also, you have to learn to manage your bitcoins and account for SR fees and changes in the value of bitcoin.
There's a lot more to consider when you sell on SR than in real life. That said, if you're up for the challenge, it can be quite rewarding.

I think the toughest part would be getting all your money out of bitcoins and into cash, especially if you're moving a lot of money, that can be suspicious if done improperly.

You're absolutely right. Vendors take a significant hit when they convert bitcoins to cash.
Some vendors use their bitcoins to buy drugs using a different account. That way, they avoid the problem altogether.

Aren't there services that will convert BitCoins into cash anonymously, and send it through the mail? Or do you mean in terms of declaring where you're getting your money from when doing taxes?
