Can I use this tool to help defend myself against cyber attacks? If yes, how so?

On their site they say - "Syslog is a clear-text protocol. Anyone with a sniffer can have a peek at your data."

Does that mean that my Tor exit node can be sniffed?

Use encryption to avoid being sniffed.
