Yeah it sounds complicated, here's a simplified version:
You will receive the redeemScript, note this just in case Evo vanishes so you will be able to get your money back if you can work it out with the Vendor.
in case you need a refund: copy & paste some text into Bitcoin-QT (the standard bitcoin client), change "Your-Private-Key-Here" to your private key, and copy paste the numbers you got to Evo.

If you want to use the P2SH style of escrow, I would use a market designed from the ground up to do it.
However, it is my understanding that on Evo for the buyer it works something like this:
If you don't know how to do the last step without any further questions, I would not use the p2sh escrow system without reading up on bip0016 and becoming familiar with the raw transaction api or tools that allow you to work with raw transactions.
