The Grand Wizard has found BitMessage to be an unreliable resource hog and would rather avoid using it if possible. We are trying to get Adium TOR-ready and currently have Adium traffic running through the TOR SOCKS5 proxy at 127.0.0.1. We've also got forced encryption on and have set up a couple of Jabber accounts. However, we have not been able to connect to any *.onion jabber server, which makes us think maybe we've missed something.
We may be forced to use BM-2cUf6a7GV6pPobScsUdBV3EzENkm67x1D5 (our BitMessage address) for chats. But we'd much prefer using Adium and Jabber over TOR. Is this advisable or even possible?

You have to set the onion server in the second tab as connect server and leave the domain set to your usual clearnet jabber server.
I recommend you use Pidgin instead of Adium.

If you use the Tor Browser Bundle make sure it is port 9150.
Running a deamon the standard is 9050.
