Lots of people use safe-mail or riseup but a lot of places will work as long as you only connect via tor and PGP everything. Ideally you'll want a server not located in the U.S. that doesn't keep logs/deletes things after XY amount of time. I like safe-mail but I would only use thay with pgp because I heard too many things that concern me. If you really want an email that will protect your privacy and don't mind paying a couple bucks look at mykolab. They are in Switzerland and are very security conscious. I spent a lot of time looking into this stuff and I am very impressed with what they offer.

I'm mobile now, so format won't be so easy on the eyes. But this is a great list of ESP's that are pro-privacy. Some...more than others.
Protonmail, Riseup (offer free Van too) and Lelantos (pay, Tor only) are the some of the finest. I would not suggest safe-mail with too many reasons to list. However, if you do have an account there and encrypt EVERY email...then there's nothing to worry about.
