What I mean is can either market see, say, the wallet address and then immediately know its coming from/going to market "X" ?

Why would it matter?
A = market you are withdrawing from
B = market you are depositing to
It is very possible that market B would be able to detect which market the funds are coming from if market A handles withdraws through a static hot wallet. It is also possible that market A would be able to detect which market you are sending to if you are re-using a deposit address on market B, only if market B immediately transfers deposits to a static hot wallet.
