What's the safest way to encrypt files?

I have been sloppy with my OPSEC since I started using DNMs 9 months ago and I have sensitive data that could be used to incriminate me in my computer (DNM passwords and photos). I do not trust the encryption tool provided by Windows, which software should I use instead?

You shouldn't use windows to open sensitive files.

Use the disk encryption that comes out of the box with your favorite linux distribution in a usb stick and a secure password.

Anything that uses AES 256-bit is fine. Even WinRAR lol

(but seriously, use TrueCrypt/VeraCrypt/whateverthefuckisnotdiscontinuedbynow and encrypt your entire HDD)

As I'm not a US citizen (I'm from South America) I thought I shouldn't worry much about my OPSEC. I was wrong, some people are getting in trouble by simply importing marijuana seeds. It rarely happens I guess, but if my stuff is seized and LE decide to investigate me I would be in serious trouble.

I use linux mint with full disk encryption for stored files. Most people would say to use tails w a persistent volume, though
